Cilantro-Garlic Shrimp with Brown Rice and Peas

1 tablespoon olive oil
1 pound peeled and deveined large shrimp
6 garlic cloves, minced
2 teaspoons fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup coarsely chopped fresh cilantro

Heat oil in a large skillet over medium-high heat. Add shrimp and garlic; saute 5 minutes or until shrimp are done.
Add lemon juice, salt, and pepper; cook 1 minute. Remove from heat, and add cilantro.
Yield: 3 servings (serving size about 1 cup)

Serve over whole wheat pasta or brown rice! Add your favorite veggies on the side!
